Fink Restaurant & Suites
★★★★☆
Brixen, Italy
Boutique Hotel
A restored 15th-century townhouse in Brixen with nine minimalist suites, monastic-inspired cuisine and Roman baths beneath historic vaults.
About the hotel
Located beneath the historic arcades of Brixen's old town, Fink Restaurant & Suites occupies a centuries-old townhouse in the heart of South Tyrol's Eisack Valley. The property sits along Kleine Lauben, a pedestrianised street surrounded by medieval architecture, traditional shops and lively cafés. Brixen Cathedral, the Hofburg Palace and several cultural attractions are only a short walk away, while the surrounding mountains provide a distinctive Alpine backdrop. Despite its position in the historic centre, the hotel's intimate scale and sheltered interior courtyard create an atmosphere of quiet retreat from the surrounding streets.
The building's history extends to the fifteenth century, with even earlier structural elements connected to Brixen's medieval town walls. Over the centuries, it served several purposes, including a post office, coppersmith's workshop, coffee house and butcher's shop. In 1896, Johann Fink acquired the property as an inn and butcher's business, beginning a family tradition that continues today. Fourth-generation owners Petra and Florian Fink completed a substantial restoration in 2023, revealing original stone walls, vaulted ceilings and historic architectural details. Their philosophy combines respect for the building's heritage with sustainable materials and environmentally conscious hospitality.
The property contains just nine individually designed suites, where minimalist contemporary interiors are integrated into the original architectural structure. The restoration involved architects Armin Sader and Stefan Gamper, with the design concept developed by Stefan Hecht of Substanz Design. Natural stone, reclaimed timber, wooden floors and soft fabrics create a restrained aesthetic that complements the historic arches, bay windows and occasional ceiling frescoes. Accommodation includes approximately 33-square-metre Suites and larger Arcus Suites of around 45 square metres, with king-size beds, seating areas, air conditioning, rainfall showers and views towards Brixen's arcaded streets.
Wellness and gastronomy reflect the property's historical character. The intimate Thermae spa occupies restored vaulted rooms and a sheltered courtyard, combining Roman-inspired warm and cold bathing pools with a wooden sauna, herbal steam bath and quiet relaxation area. Aromatic herbs associated with Brixen's monastery gardens contribute to the sensory experience. In the restaurant, chef Florian Fink reinterprets South Tyrolean monastic cuisine through seasonal vegetables, regional herbs and carefully sourced ingredients. Traditional recipes are presented with a contemporary simplicity, while the restaurant's restored arches and understated furnishings provide a direct connection to the building's past.
Fink Restaurant & Suites is particularly suited to couples, design enthusiasts, gastronomy lovers and travellers interested in history and regional culture. Its nine-suite configuration creates a more personal experience than a conventional city hotel, while the central location makes it practical for exploring Brixen without a car. Guests can combine cultural visits with walks through the surrounding countryside, cycling excursions and journeys into the Dolomites. The combination of historic preservation, environmentally conscious design, distinctive regional cuisine and a secluded wellness area makes Fink a compelling example of contemporary boutique hospitality rooted in South Tyrolean traditions.
